|Pancho began in restaurants many years ago, it all started in 1974 when he came up with the idea of selling grilled chicken. On Monday, January 6, 1975, EL POLLO LOCO was born in Guasave, Mexico; a village in Pacific coast. EL POLLO LOCO became the first Mexican restaurant chain to conquer the palates of consumers in the United States of America by opening the first POLLO LOCO in the U.S. on December 8, 1980 in the corner of Alvarado and 6th in Los Angeles, California.In 1986, Pancho comes up with yet another venture with a different concept yet preserving the Mexican essence, which consisted of 100% Mexican food with the best quality and service. Thus, the first of July 1987, Pancho opens Taco Palenque in Laredo, Texas with great success and extending across South Texas with its unique flavor to delight palates.
On July 31, 2005 along with the support of their children, Pancho and Charles opened in Laredo Texas “Palenque Grill” and a year later, on August 1, 2006, Pancho and Juan Francisco Jr. opened the second restaurant in McAllen with a concept of “full service” excellent authentic Mexican dishes and a very bohemian atmosphere and entertained with piano trio and live mariachi.
On December 15, 2011 Pancho, his wife and daughter Flery FlÃ©rida opened Palenque Grill in San Antonio, Texas.
